An Almasy favorite, this is a quick and easy dinner for weeknights. Buy your shrimp already peeled and cleaned and you’re ready to start cooking!
This recipe is a staple in our house. Shrimp is easy to buy and even easier to cook, making it a quick and satisfying weeknight meal. Don’t skimp on the freshly grated parmesan – it really finishes the meal!
- olive oil
- 1 tbsp butter
- 2 garlic cloves, minced
- ½ onion sliced
- 1 to 1-1/2 pounds shrimp, peeled and cleaned
- 1/3 cup white wine
- salt & pepper
- Parmesan cheese
Heat a large saucepan on medium-high heat. Add a drizzle of olive oil and butter to pan. Swirl to coat pan. Add garlic, cook for one minute. Add sliced onion and cook until translucent.
Add shrimp to pan and cook 5-6 minutes, until cooked through. Add white wine to pan.
Season with salt & pepper to taste.
Serve shrimp over cooked linguini pasta, top with freshly grated Parmesan cheese. Add a side of sweet peas, they go perfectly with the pasta and shrimp!
You can customize this dish by adding to the shrimp mixture. Stir in some chopped tomatoes toward the end, or other vegetables, more garlic or shallots instead of onions. And really any kind of pasta would work as well.
