This is one of our family’s favorite casserole dishes. And it’s one of my favorites also because it is super easy to throw together and bake on a weeknight. Customize it to your liking with spicy or mild salsa or extra cheese.
- Cooked chicken – about half of the meat from a rotisserie chicken or 2-3 chicken breasts cooked and shredded
- 1 can black beans
- 1 can corn
- 1/2 jar salsa (mild or medium)
- 1 bag microwave brown rice (cooked)
- 4-6 oz cheddar cheese shredded (+ extra for topping)
Mix all the ingredients together in a bowl and transfer to a casserole dish. Top with extra cheese. Bake at 375 for 20-25 minutes or until bubbly. Serve hot with extra salsa and sour cream if you like.
Note: This recipe is easy to double so you can freeze the rest for another night.
