Some of you might be asking yourselves, “Where is this week’s menu from Emily? Has she gone missing? Forgotten about us? What’s the deal?”
Well here’s the deal. I took the easy way out this week.
No, I mean it. Here’s this week’s menu for you doubters:
- Chicken Cordon Blue (frozen from Costco) with microwave rice (from Trader Joe’s) and canned corn
- Spaghetti & Meatballs (I froze the meatballs before the holidays. Thank you 2017 me!)
- Two (2) Home Chef meals that will be delivered to my house ready to cook
- Chili – one of the ones you all recommended from my FB post last week
So there you have it. The easy way out of menu planning!
Sometimes you just have to press the easy button. Don’t you agree?
I’ll admit that I haven’t decided which chili I’ll make yet. I may take a vote from the rest of the family before I decide. We ate chili last week that was cooked by the St. Mark’s UMC United Methodist Women. I tell you what, those ladies can cook! They’re pretty protective of their recipe, though, so I’m not able to share it here (because I don’t have it!)
The winter is wearing on me, so the easy (and comforting) menu was a must this week. Ordering from Home Chef on weeks like this is great because it takes away from the stress and I get to try new things. There are a number of recipes that are my go-to meals when things are rough, and most of them you see here on this blog pretty regularly (and I’ve published them as well – check them out here.) but you shouldn’t need a recipe for nachos, or spaghetti & meatballs (if you do, give me a call.
