Ready for your weekly menu plan Here’s what we’re eating this week as we work on our 2018 reset!
This week features kale, pork chops and other dinners that I’m sure my family will love – so maybe yours will, too? Why not try at least one new recipe this week? Let me know how it goes!
Chicken and kale in peanut sauce.
This comes courtesy of Papa Spuds, the veggie box service I use on occasion. They started doing meal kits last year and I ordered this one as part of an easy way to add to my weekly menu plan. The peanut sauce makes a great dressing or sauce for other goods as well.

A new recipe for me from Cooking Light. I’ll give it a review after we try it. Note: this is the second recipe that requires kale, so be sure you buy enough!
A long time favorite and a very quick and easy dinner for a weeknight. Courtesy of Real Simple magazine 2007.
Pork chops, mashed potatoes, steamed broccoli.
One of my favorite indulgences is the gravy on these pork chops. Props to Shelley for sharing this recipe with me years ago.
You’ll be surprised at how good this one pan dinner is. And it’s s detox approved recipe provided by Lifetime Fitness as well! The green salsa is my new favorite condiment.
The recipe is part of this pdf of detox recipes, so you can see what else they recommend, but I’ve reprinted it here also.
