This week’s menu plan is short, as we’ve got some other activities planned for a couple of nights. So I’m providing you with four items for the week. You’ll notice that these all fall into the “comfort food” category because, hello! It’s getting cold out! All but the first one are taylor-made for weeknight dinners, as they can be made quickly, and kids can even help!
Here’s what we’re eating:
Ham, Kale and White Bean soup – this is a new recipe for me, straight out of Cooking Light (Oct2017). Hopefully warm and comforting, since it’s cold this weekend.
Parm-Style Chicken Sliders – another new recipe for me, but it should be fairly easy. Also from Cooking Light (Aug2015). Comfort food in sandwich form!
Garlicky Grilled Cheese – Who doesn’t like grilled cheese? We like it the traditional way, but also lots of different ways, and this is a unique take that also includes bacon and spinach. You guessed it – Cooking Light (April2014).
Black Bean Enchiladas – I’m making this from a recipe that came in a dinner box I ordered a while back. But you can source a recipe from any number of great websites – myrecipes.com and allrecipes.com are my favorites.
