As I mentioned in my last blog, getting ready to head back to school always makes me turn back to organizational principles and to getting our house ready for the daily grind that comes with it. We’ve finalized the girls schedules and filled the calendar with sporting events, social activities and school responsibilities. We’ve even started to make plans for vacations and holidays, which means we are already talking about Christmas! Hard to believe but true.
Now that I’m in my 12th year of back-to-school, I pretty much have my system in place for food and menu planning, scheduling and calendar management and getting the kids and myself where we need to be.
First off, we plan for the first day of school.
What is everyone wearing? When are we all getting up? What is for breakfast? For lunch? For dinner? What do the girls need to bring with them? The second day is the same, since our school is on a A-B schedule, it’s all different classes, teachers and friends. Kind of like the first day all over again.
Once we’ve made it through those first two days, it becomes about making it through the week. So I plan the weeks menu, being sure to include healthy but also comforting foods to combat the stress and inevitable lack of sleep.
This year is senior year for us. And while I’m excited, I’m also hyper-aware that everything is the “last time” we’ll do it. So I plan to take lots of photos and video, and to be fully present when we’re talking about activities and school and friends and that thing that happened at lunch today. We’ll go to concerts and have sleepovers and hit all the movie premieres.
For our menu this week, I’ve got a few tried and true favorites.
Like I said, comfort food!*
- Chicken and mangoes with rice noodles (Adapted from this Shrimp recipe – just use chicken!)
- Southern Style Shrimp with rice
- Creamy beef noodle bake
- Salad with chicken, cheese and ranch – Exactly what it sounds like. A basic green salad topped with sauteed chicken chunks, cheddar cheese and ranch dressing. Yum!
- Take out – fried chicken with all the sides. Hit a tailgate with some Bojangles!
