Folks have become accustomed to asking me what we’re eating pretty often, so here’s what we’re eating this week! We have several meals that we’ll be having out due to a lacrosse tournament, so we’ll try to balance that with home-cooked meals that are yummy and fun to cook as well!
Nachos – A family staple. Literally pile every ingredient you can find on some chips and smother them with cheese. MMMMM. If you need a recipe, go with this one from Cooking Light.
Chicken & Veggie Tostadas – I’ve included this in a menu before and it was yummy. Sounds a lot like the nachos, but it’s not because of the summer veggies. Give it a try!
Stir fry veggies with rice – Yep, this one again. But it is good to have an all veggie meal right before you plan to eat out a lot. Because vitamins.
