This week we’re still in school. A fact that the girls will most definitely whine about until their last day of classes on Thursday. And then they have bunches of projects to complete and finals to study for. Also, we have a leak or some sort of water issue in the wall behind the sink that is being checked out on Monday. So as you can see, I’ve got a lot some issues to work around this week in putting together the menu plan. I think that leveraging the grill and planning some easy dinners, along with a box from Home Chef, I should be able to make it through this week!

Seared Tuna and Salad – One of my favorites, and it is easy and delicious. I’ve featured this several times in past menu plans, so if you haven’t made it yet, get to it!
Italian Sausage on the grill with sautéed corn & spinach – The sausage came from my trip to the farmer’s market this weekend. If you can make it there, getting some sausage from a local meat supplier is an excellent way to try out something new and REALLY delicious. The Sauteed corn & Spinach is a recipe from a cookbook that the girls gave me last year – The Mom 100 Cookbook. I like it for it’s simplicity and family-friendly recipes.
Chopped Cobb Salad – This is a good hearty meal that you don’t have to cook. Start with a rotisserie chicken. Then add your favorite cheese (blue cheese, cheddar or feta are all good), some boiled egg, tomatoes, carrots and cucumber. Round it out with some ranch dressing. Yum!
Nachos – If you don’t know how to make nachos yet, well, bless your heart. But here’s a great baked version. You can also let your family assemble their own. Just set up everything buffet-style. Don’t forget the avocado!
