Does anyone else feel summer in that sunshine that’s shining down? I sure do! It’s not here yet, though. There are still chilly mornings and warm afternoons. Our heater/AC unit doesn’t know what to do.
Here is a quick and easy menu plan to get you through the first part of the week. Easter weekend is another story, however. Many of you will be vacationing, and others will be hosting family for the holiday weekend. I plan to post some of my go-to recipes for holiday get-togethers early this week to help you plan, so look for those!
For now, here’s what we’re eating this week:
Hamburgers (on the grill!) with sweet potato fries – There are four of us, so I buy a pound of meat and basically cut it into four squares. I love to use Cavender’s seasoning on my burgers. Adds that little something extra.
Chicken Paprikash – This is a family favorite, and is a recipe given to me by a friend many years go. She told it to me from memory, so feel free to customize it to your taste if you like. Serve it with rice and your favorite steamed or roasted veggies (I like broccoli).
Pork Carnitas Tacos – I made slow cooker carnitas last month and it made way too much, so I froze the leftovers. I’ll be making a pineapple-mango salsa and also serving some sliced avocado with it. Yum!
Sausages and salad – This is a very simple way to serve a low carb meal. Pick up your favorite sausages from the store, or better yet, get some from a local farmer. Ours is from a meat share I got a few weeks ago and it is local hot Italian sausage. I just slice it and pan fry it. Perfection.
