So here’s what we’re eating this week. We are still in the middle of lacrosse season, and everyone is just praying for Spring break to be here. So I’m resorting to some quick and easy stand-bys for several meals. Although, there’s still something new here, as you know I can’t let a week go by without trying a new recipe. Enjoy!
Roasted Pork Tenderloin and Veggies – This recipe for tenderloin is a great tutorial on how to cook this cut of meat – cook and learn. Then for the veggies, I peeled and sliced carrots in to 1/4″ slices, then thinly sliced some brussels sprouts. Toss with olive oil, salt and pepper and roast along with the tenderloin. A very healthy meal, and only one person complained about the brussels sprouts (guess who?)
Sweet and Sour Chicken – This is the new recipe for this week. I’m excited to try it because the girls love ordering this at Chinese Food restaurants and I’d be happy to cook it more for them at home.
Pizza – Sorry guys, but did I mention that it’s lacrosse season? Cooking after getting home from a 6pm game isn’t easy. So the frozen box it is. I’m trying California Pizza Kitchen this week. I’ll let you know how it is.
Grilled Cheese and Sweet Potato Fries – Yes, you read right. My kids request grilled cheese often. We do both traditional cheese and a second version with tomatoes, fresh mozzarella and basil (or pesto). So yummy. I’m adding in the sweet potato fries to get another veggie on the plate and round out the meal for these hungry kids.
Fish with Green Beans and Butter Sauce – This is a go-to weekend dinner. I’ve used it on the blog before. And if you haven’t made it, you should. It is delicious and so easy. Serve it with rice, pasta or noodles if you want. Trust me, you’ll love it.
