This week is a little less crazy-pants than some in the past. Although you never know what’s going to happen! Half the benefit of having a plan in place is so we can get through anything, right? Well, here are four recipes for you to use in your planning for the week. Enjoy!
Salmon with Corn & Bacon Saute – I love this recipe! You’ve seen it recently and I warned you that it would be back. It’s a great low-carb dinner.
Chicken Parmesan Sliders – Cooking Light will always come through with new and interesting menu items that can be cooked in 30 minutes or less. I’m giving this one a try and will let you know how it turns out!
Pork tenderloin in the slow cooker with rice, grilled asparagus and carrots – I originally found this on Pinterest, and it is really good. Serve it sliced with the gravy or on slider rolls as a sandwich. We’ll be having it with rice and some roasted veggies.
Mexican casserole – I made this a couple of weeks ago and doubled the recipe, so will be pulling it out of the freezer to heat up the night of a game. Easy-peasy!
This Weeks Dessert: I thought I’d add a weekly dessert to my menu plans. Why not? The kids eat ice cream all the time anyway.
Festive Cherry Drops – We all have a Christmas cookie that we didn’t get around to making. This is mine. I love these cookies and missed them terribly at Christmas time!
