As we head into the third week of February, it’s hard to believe that this is a short month. Even though we’ve had some very mild weather, the winter seems like it is a long way from being over. One of the keys to surviving these months is keeping up with your plan and spending less time fretting and worrying over dinner. You’ll have more time for cuddles, or movies, or whatever else you like to do to get through until Spring gets here! Enjoy!
Mexican Black Bean, Corn & Rice Casserole – I don’t typically advocate for using a ton of canned goods in my recipes, but in the dead of winter, when it’s hard to find fresh veggies for salads and sides, a good casserole is perfect on the menu. This one was requested by the girls – they love it.
Basil Shrimp with Feta and Orzo – This Cooking Light recipe uses an oven bag to cook the shrimp with the orzo. It is very flavorful and simple to both cook and clean up.
Carnitas Tacos (slow cooker!) – I love this recipe – it’s easy and really delicious and it makes enough for two dinners (so you can freeze what’s left for dinner in a few weeks.) It is so so easy to pick up the guacamole and mango salsa at the grocery store deli.
Grilled Cheese & Chicken Noodle Soup – My daughter loves comfort foods so much. They make her feel calm and happy! When I ask what she wants to add to the dinner menu, grilled cheese is always one of her staples. We love the traditional, but another favorite is to make it with tomatoes, basil and fresh mozzarella.
Salad with Sauteed Chicken – This is a staple for me and has been for many years. It’s a light dinner, but still has all the protein you need. If your kids are like mine and really need carbs, grab some yeast rolls or make some garlic bread. Just make your favorite salad and top it with cubed chicken breast sautéed in a combination of butter and olive oil. Before it’s finished douse it in soy sauce and cook until the chicken is done and covered in the soy glaze. Some Lawry’s seasoned salt is a great addition as well. Top the salad with chicken, shredded cheddar cheese and ranch dressing. Yum!
