Tonight I did a thing that I said I wouldn’t do.
I ate a vegetable in place of a carb.
But you know, sometimes that happens. Sometimes, your low-carb diet starts to work for you and then desperate times call for desperate measures and you do something that seemed unthinkable just a few short weeks ago.
Here’s a picture of my dinner.
Doesn’t it look like rice? It looks like rice, right? Guess what? It tasted like rice, too.
It was really really good! I didn’t notice that the cauliflower wasn’t rice. The consistency was about the same and the gravy helped to mask any non-rice-ness that might have been there.
A special shout-out to Epicurious who did a story on how to cook the cauliflower so that it would have the most rice-like flavor and consistency. Very helpful! Give it a read here. I went with the recommended microwave method. And Harris Teeter carried the “minced cauliflower” already prepared in the veggie section, too. So that made it super-easy!
So there you go. After all my complaining, I actually tried a vegetable as a substitute for a carb. And it wasn’t bad.
