A Grillin’ Out Menu for the Weekend

grill outFinally, a holiday weekend is upon us! And who isn’t excited about a 3-day weekend? If you live in the South, you can bet that there will be some grillin’ in your life this weekend.

Here is a grillin’ out menu, just for you, so you don’t have to worry about it!

Appetizer – Mango-avocado guacamole – This is my go-to, guest-pleasing guac recipe. Everyone loves it!

Main Dish – Grilled sausages & brats with beef hot dogs for the kiddos – Choose your favorite chicken sausages or beef brats and throw them on the grill. This is a much easier way to feed a crowd and enjoy yourself than slaving over a larger cut of meat. Be sure to have good toppings on hand, and you’re good to go!

Side Dishes –

Berry-spinach salad: Lightly dress your spinach with champagne vinaigrette, and top it with sliced strawberries, blueberries goat (or blue) cheese and slivered almonds. Yum!

Grilled veggies: Choose your favorites, from zucchini to mushrooms to red onions, and add them to the grill with the sausages and brats. Throw some pineapple spears on too, they are super yummy!

Chilled pasta salad: The make-ahead sensation that will round out the meal. Use rotini pasta then add in diced cucumbers, carrots and tomato, some marinated artichoke hearts, feta cheese and black olives. Toss the whole thing with Italian dressing.

 

Dessert – Vanilla lemon cake with buttercream frosting and/or ice cream sundae bar

For the cake, bake your go-to vanilla mix cake in a rectangle pan. Line the pan with parchment paper before you pour in the mix and it will be easy to remove from the pan. Once the cake has cooled and you’ve removed it from the pan, use a long knife to slice the cake in half lengthwise. Spread a generous portion of lemon curd between the layers and replace the top layer. Make some easy buttercream vanilla frosting and put on top. Serve with sliced strawberries.
