When I stumbled across this recipe on Pinterest, it wasn’t me that decided to pin it, it was my daughter. “Mmm that looks good!” she said. So I held on to it for a while until I needed something new for my weekly menu.
Grilled cheese is a staple around here – we eat it every couple of weeks because it is easy and comforting. But this grown-up version looked like something special!
We gave this a try on a Sunday evening when everyone was busy with homework, housework and paperwork. It was pretty easy to make, like grilled cheese is. And it was pretty good!
The ingredients are basic: bread and cheese. Only this cheese is brie! And it gets paired with some really yummy fig jam. Then to make it extra special, I mixed some chopped rosemary into the butter before toasting the sandwich. Savory to go with the sweet!
The finished product was really pretty (I managed not to burn anything – yay!) And it was delicious.
My honest review is that this is a good teat, but that it’s a little on the sweet side. The fig jam was VERY sugary, which was amplified when mixed with the melty brie.
Everyone else enjoyed the sandwiches also, with one exception. One of the girls just wasn’t in to it, and they both agreed that for dinner, a regular grilled cheese might be better.
However, the original recipe calls for this sandwich to be made with pound cake – which we all agree puts this squarely into the dessert category. So maybe that’s what we’ll do next time!
