I know you’ve all missed me this past two weeks. All five of my readers probably think I dropped off the earth. But really, I was just really really busy. It happens.
Anyway. Here is the menu for this week. I’m bringing the grill back because the weather has been so nice. I love the grill because there is less to clean, and I can get Pete involve in the cooking. Of course, there’s always lots of stuff to take care of in the kitchen also, while the grill master gets all the credit for the meal.
Creamy Beef Noodle Bake – I found this recipe on Pinterest, so I’ll let you know how it turns out! Serve with sautéed kale or spinach.
Hamburgers on the grill with a spinach salad. I’m a bit more into veggies, so the salad on the side is a must.
Hotdogs and/or sausages on the grill, tater tots, corn & cantaloupe. I love that the grocery store now carries several different brands and types of sausages. They are beef and chicken, and have cheese, and other flavors inside of them. Pick your favorite!
Chicken BLT Salad – As I mentioned, I’m big on the veggies these days, so a salad as a meal is par for the course.
Baked Flounder, roasted broccoli & rice – A seemingly really easy baked fish recipe. Save this for a really busy night when you don’t have much time to prepare dinner. In the amount of time it takes to cook the rice, the fish and broccoli should be done.
